As a kid, I remember fishing with my grandfather. . . .

We wouldn’t catch many fish but we always enjoyed being together. On each outing he would pack a lunch for us that always included his Baja Chili. We would heat it on an old camping stove. At that time I was more interested in lighting the stove than I was in his chili.

As years passed, I heard more about his Baja Chili recipe and how he and a Texas friend he met in World War II perfected the blend of spices. Soon it became my favorite food! At some point, he and I traded fishing for cooking Baja Chili together. We sampled his chili seasoning spices in different recipes including beef, chicken, shrimp and other seafood. One thing remained constant. We used the same Baja Chili spice blend in every recipe we made. Perfect!

I miss those days with my grandfather. But, each time I enjoy Baja Chili I am reminded of the wonderful times we spent together.

RECIPES

Bacon Beef Chili

Ingredients:

  • 1/2 pound Bacon, cut into small 1/2-inch pieces
  • 1 pound Ground Beef
  • 1 15-ounce can of tomato sauce
  • 1 bottle of beer (preferably dark)
  • 2 cups of water
  • 2 tablespoons Baja Chili Seasoning
  • 1 tablespoon Brown Sugar
  • 16 ounces Pinto Beans
  • 1 - 28 ounce can diced tomatoes

In a large saucepan or Dutch over medium-low heat, add the cut bacon. Cook until crispy. Remove crispy bacon and place on a paper towel.  Turn the heat to high and add the ground beef, cook until browned. Drain off the excess fat.

Return the pot to medium heat, add the cooked bacon and all of the remaining ingredients except for the beans and the can of diced tomatoes. Mix well and bring to a boil, then reduce heat and simmer for about two hours, stirring occasionally.

If the chili gets too thick, add some water.

Twenty minutes before you're done simmering the chili, add the beans and diced tomato.

You're done with this twist on your basic chili recipe!

Simple Chili

This is a wonderful and simple Chili recipe.  It's the definition of "Easy Chili".

Ingredients:
  • 2 teaspoons oil
  • 1 ½ pounds lean ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 large can tomatoes, (28 ounces)
  • 2 tablespoons BajaChili Seasoning
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

In a large saucepan or Dutch oven, brown ground beef with onions in hot oil.  Drain off excess fat, return to heat and add garlic. Continue heating and stir for less than a minute. Add the remaining ingredients; bring to a low simmer.  Cover and continue simmering over low heat for 1 1/2 to 2 hours.

Enjoy this quick and easy chili!
